3 Cooked white potatoes or sweet potato
1/2 cup charbroiled green chile slices
1/3 cup shelled corn
1/4 cup chopped yellow or white onion
1 piece chopped celery
Notes: You can buy frozen chili slices and shelled corn, and put them to heat. Once ready, I mix them in a deep dish with all the ingredients.
For the Sauce (4 servings)
- 2 tbsp. vegan mayonnaise
- 2 tbsp. regular mustard
- 1/4 cups pine nuts, hemp, or vegan blue cheese
- 2 dried chiles
- 1 small fresh red pepper (mini peppers)
- 1 small piece of serrano pepper (optional)
- 3 tbsp Tamari sauce
- Salt to taste
- 1/4 cup of water
Blend ingredients until you get a creamy and smooth consistency, if it is very thick you can add more water, start with a little bit. Finally, add the sauce on top.
