INGREDIENTS:

  • 3 Cooked white potatoes or sweet potato

  • 1/2 cup charbroiled green chile slices

  • 1/3 cup shelled corn

  • 1/4 cup chopped yellow or white onion

  • 1 piece chopped celery

Notes: You can buy frozen chili slices and shelled corn, and put them to heat. Once ready, I mix them in a deep dish with all the ingredients.

For the Sauce (4 servings)

  • 2 tbsp. vegan mayonnaise
  • 2 tbsp. regular mustard
  • 1/4 cups pine nuts, hemp, or vegan blue cheese
  • 2 dried chiles
  • 1 small fresh red pepper (mini peppers)
  • 1 small piece of serrano pepper (optional)
  • 3 tbsp Tamari sauce
  • Salt to taste
  • 1/4 cup of water

INSTRUCTIONS:

  • Blend ingredients until you get a creamy and smooth consistency, if it is very thick you can add more water, start with a little bit. Finally, add the sauce on top.
