Directions for making the pumpkins:
Cook the pumpkins in boiling water, cut them in half, and remove the seeds.
Instructions to prepare the stuffing:
Chorizo @veggiorizo roasted with garlic, chopped onion, and salt (optional).
Once ready add squares of red pepper and fresh celery
Toppings:
Chopped lettuce
Avocado squares with lemon and salt.
Hemp and walnut cream
To make the cream you have to blend:
1/4 cup of water
2 tbsp hemp seeds
1/3 cup walnut (soaked)
1 tbsp vegenaise or vegan Hellman’s
1 tbsp mustard
1/2 lemon
1 piece of dried arbol chili
1 pinch of cayenne pepper
Salt to taste
Note: add more water if it is thick
INDICATIONS:
Serve the @veggiorizo preparation over the pumpkins, then the lettuce with the avocado squares and garnish with the cream.
It is an ideal recipe for lunch or dinner !!

We share with you this super delicious and dairy-free recipe from our Health Coach @alidavegan 🍰👩🏼🍳
Ingredients:
1/2 Lt. Almond or coconut milk
1/4 cup chickpea flour
1/4 cup cornstarch or kudzu
1 Tsp. agar
1/2 cup monk fruit @thefunctionalfoods
1/3 cup maple syrup
4 dates (blended with maple syrup)
4 drops of vanilla essence
1/2 Tsp. ground cinnamon
Pinch of lemon or orange zest (optional)
Instructions for the "Dough"
Stir 1/4 cup of monk fruit, 1/4 cup of honey with the date, and cornstarch or kudzu in a bowl.
In another bowl, mix the chickpea flour with 1/2 cup of water. Once ready, add it to the monk fruit and cornstarch. Blend it well until you get a thick mixture.
Boil the almond or coconut milk in a pot, add 4 drops of vanilla essence and a pinch of lemon peel. Once it is boiling add the mixture from the previous bowl and let it cook. Stir it occasionally to avoid sticking.
Once well cooked, remove it from heat and add the agar.
Make the Caramel
Mix 1/4 cup of monk fruit with 1/4 cup of maple syrup in a pot with the remaining date and a little bit of water. Turn on the fire. When the caramel changes its color, add 200 ml of hot water, cooking it for 3 minutes until you get a thick transparent brown mixture.
Place the caramel in a flan mold and the flan on top.
Leave the flan to cool down. Once it is no longer hot, place it in the refrigerator for at least two hours.
When serving you must turn the flan down on a plate, so that you have the caramel on top as in the image. ...

INGREDIENTS👩🏼🍳🍳:
For the creamy cilantro sauce, blend:
-1 small fist coriander
-1 Yellow lemon or 1 1/2 green lemon
-1 Tbsp. Hellman's vegan mayonnaise
-4 strips red onion
-1 clove garlic
-Salt to taste
Vegetables:
-Cucumber or chopped celery
- Squares or strips of red pepper
-Avocado squares
-Dried tree chili squares or Cayenne Pepper.
Note: Mix the green sauce with the vegetables.
Ingredients for the topping:
Mix and marinate for 10 minutes
-Thin strips of portobellos
-2 Tbsp. Sesame oil or Tahini
-2 Tbsp. Miso or Tamari sauce
INDICATIONS:
Serve the green sauce with vegetables on a tortilla @alemendro or a nopal tortilla with corn.
Add the portobellos topping and optionally garnish with charbroiled Caribbean chili sauce.
