You can eat this recipe as a main dish or you can add it to zucchini, roasted nopales, chips, or tacos with a little bit of avocado. This recipe can be served in many ways.
INGREDIENTS:
Step 1 for sauteing:
- 2 cups mushrooms
- 1/4 cup chopped coriander
- 1/4 cup orange pepper (optional)
- 3 chopped garlic cloves
- 1/4 purple onion cut in squares
- Salt to taste
- 1 tablespoon ponzu sauce or tamari sauce (optional)
- 2 chopped chiles de árbol
Step 2 for the sauce:
Add to a blender
- 1/2 cup walnuts or almonds (soaked)
- 1/2 green lemon
- 1 dried chipotle
- 1 small piece of celery
- 2 tablespoon mustard
- 1 garlic clove
- Pinch of dill
- Salt to taste
- 1/3 cup of water
DIRECTIONS:
Roast 1st part ingredients starting with garlic, and onion, and chile de árbol, and pepper. Add salt and Tamari sauce. In the end, add mushrooms and coriander. Be careful they are not with too much water.
Once ready sauteed mushrooms, serve them on a soup plate, and add walnut sauce. Mix well.
