This detox soup packs a powerful one-two punch in terms of flavor and nutrition. It’s vibrant and rich in texture, and it will satisfy you in more ways than one – from your taste buds to your colon.

INGREDIENTS:

  • 4 cups vegetable broth plus 2 cups

  • water (or 6 cups water)

  • ¼ cup red onion, diced

  • 2 cloves garlic, minced

  • 3 celery stalks, diced

  • 3 medium carrots, diced

  • 1 to 2 cups broccoli florets

  • 1 cup tomatoes, sliced

  • 1 tablespoon fresh ginger, minced

  • 2 cups kale leaves, shredded

  • 1 cup purple cabbage, chopped

  • 1 teaspoon turmeric

  • ¼ teaspoon cinnamon

  • ⅛ cup fresh lemon juice

  • Salt and black pepper, to taste

  • Cayenne pepper, to taste (optional)

INSTRUCTIONS AND NOTES:

  1. In a large pot, toss together all the vegetables except for the kale and cabbage.
  2. Pour in the vegetable broth and water (or just plain water).
  3. Cook in medium-high heat and let it simmer for about 5 minutes, stirring occasionally.
  4. Add the turmeric and cinnamon and mix well.
  5. Add salt and pepper to taste (plus cayenne pepper if you want your soup a bit spicy).
  6. Bring to a boil and then reduce heat to low.
  7. Let it simmer for 10 to 15 more minutes, or until the vegetables have softened a little.
  8. Add the kale, cabbage, and lemon juice.
  9. Cook for another 3 minutes.
  10. Remove from heat and serve.
