This detox soup packs a powerful one-two punch in terms of flavor and nutrition. It’s vibrant and rich in texture, and it will satisfy you in more ways than one – from your taste buds to your colon.
INGREDIENTS:
4 cups vegetable broth plus 2 cups
water (or 6 cups water)
¼ cup red onion, diced
2 cloves garlic, minced
3 celery stalks, diced
3 medium carrots, diced
1 to 2 cups broccoli florets
1 cup tomatoes, sliced
1 tablespoon fresh ginger, minced
2 cups kale leaves, shredded
1 cup purple cabbage, chopped
1 teaspoon turmeric
¼ teaspoon cinnamon
⅛ cup fresh lemon juice
Salt and black pepper, to taste
Cayenne pepper, to taste (optional)
INSTRUCTIONS AND NOTES:
- In a large pot, toss together all the vegetables except for the kale and cabbage.
- Pour in the vegetable broth and water (or just plain water).
- Cook in medium-high heat and let it simmer for about 5 minutes, stirring occasionally.
- Add the turmeric and cinnamon and mix well.
- Add salt and pepper to taste (plus cayenne pepper if you want your soup a bit spicy).
- Bring to a boil and then reduce heat to low.
- Let it simmer for 10 to 15 more minutes, or until the vegetables have softened a little.
- Add the kale, cabbage, and lemon juice.
- Cook for another 3 minutes.
- Remove from heat and serve.
